I have to apologize again, for not getting my meal planning post out last week. This week it will come out. Spring break week started out really rough with John, Asher and I all getting a stomach bug. Even though it was only 24 hours of complete awfulness, it really took me at least half the week to feel completely better. Between that and our different schedule, I was just not up to blogging. Sometimes, life is just like that.
Because of getting sick and some other fun things added in, we ended up not using all the meals I planned for, so many this week are carrying over from last week. I love when that happens because it means we spend less at the store.

Monday: This is one of our family favorites. We have to make a double batch or there are no leftovers.

Wednesday: This is another family favorite. It’s a great way to sneak in some veggies.

It was easy enough to get in the crockpot, but my kids did not like it at all. They pretty much refused to eat dinner that night. My stomach was still little off, so I didn’t eat much either, but I thought it tasted ok. I will say though that the chicken stock cooking all night was a terrible idea after coming off stomach issues. I hated the smell and had a hard time sleeping with the chicken smell wafting through the air all night. It completely reminded me of when I was pregnant and smells were really intense. So, maybe hold off on the overnight stock and just do it the next day.
