This week John is on Spring Break so our schedule is going to look slightly differently. I wanted quick and easy meals and I know that things might get switched around depending on the weather and what we end up doing as a family.
Also, I wanted to let you know that later this week I am going to share the process I use for actually putting together my meal plans. Yes, there is a method.

Monday: We got a great deal on a whole chicken a while back that I have in the freezer so I am going to try this crockpot recipe to cook the whole chicken, and then I found another one so that I can make chicken stock from the leftover chicken parts. I love being able to get the most bang for my buck.
• Whole Chicken in the Crockpot, Green Beans, Potatoes, and Carrots
• Overnight Chicken Stock
• Burgers & Zucchini Fries
• Pasta with Spinach and Peppers
• Chicken Pot Pie, using leftover chicken from Monday
• at my parents’
• Cabbage Roll Soup and Bread (from the freezer)
Pork Chops, Apples & Green Beans
This was a new recipe we tried last week. My kids loved the apples but I just thought it was ok. I really think I just don’t like pork chops. Thankfully, my husband eats everything so it all got eaten. I have so much trouble getting my daughter to eat meat.
