Monday Meal Plan: Week of March 27

This week John is on Spring Break so our schedule is going to look slightly differently. I wanted quick and easy meals and I know that things might get switched around depending on the weather and what we end up doing as a family.

Also, I wanted to let you know that later this week I am going to share the process I use for actually putting together my meal plans. Yes, there is a method.

Breakfast

• Egg, Sausage, Hashbrown Breakfast Casserole
We didn’t end up making this last week so it’s still on the list for this week

• Waffles

Lunch

• Leftovers, PB&J, Bagels & Fruit

Dinner

Monday: We got a great deal on a whole chicken a while back that I have in the freezer so I am going to try this crockpot recipe to cook the whole chicken, and then I found another one so that I can make chicken stock from the leftover chicken parts. I love being able to get the most bang for my buck.
• Whole Chicken in the Crockpot, Green Beans, Potatoes, and Carrots
Overnight Chicken Stock

Tuesday:
• Burgers & Zucchini Fries

Wednesday:
• Pasta with Spinach and Peppers

Thursday:
• Leftovers

Friday:
Chicken Pot Pie, using leftover chicken from Monday

Saturday:
• at my parents’

Sunday:
Cabbage Roll Soup and Bread (from the freezer)

Pork Chops, Apples & Green Beans
This was a new recipe we tried last week. My kids loved the apples but I just thought it was ok. I really think I just don’t like pork chops. Thankfully, my husband eats everything so it all got eaten. I have so much trouble getting my daughter to eat meat.

Thanks for giving my pork chops recipe a try. Sorry it wasn’t your favorite but I love your honesty about it! I’m happy you tried it since it helped me discover your meal plans. I’m always looking for dinner ideas.
