Monday Meal Plan: Week of May 22

 

This week I continued to fight my cold, which finally seems to be dissipating. So, I tried to do things as easily as possible. Plus, we ended up having leftovers from a few get-togethers and ate those for 3 meals this week. Also, I snagged a free Papa John’s Pizza from an email I got from them. It’s not the best pizza, but for free, I’ll take it.

Breakfast

• Baked Oatmeal

• Pancakes & Fruit

• Bagels & Fruit

Lunch

• Leftovers, Chicken patties in freezer, PB&J, Smoothies

Dinner

Saturday:
• Dinner at my parents’

Sunday:
Baked Spaghetti & Salad

Monday:
Pesto Chicken Panini, Chips, Fruit
This is one of our favorite “grilled cheese” recipes. I don’t think we have ever actually used focaccia bread.  I love it because it’s super simple and the kids love it. Plus, it tastes really good. I usually just thaw shredded chicken that I have in the freezer. I will buy chicken on sale then cook a big batch in the crockpot and put it in bags about 1 lb each in the freezer to use for this or enchiladas. It’s so convenient to have it already shredded and cooked.

Tuesday:
• Lentil Tortilla Soup & Veggie Quesadillas
Found this soup on Pinterest and I am excited to try it. My kids aren’t always the biggest meat eaters so I am trying to branch out and find some new hearty vegetarian recipes. I’ll let you know how it goes next week.

Wednesday:
• Ravioli

Thursday:
• Fish Sticks & Green Beans

Friday:
• Pizza or Leftovers
