Monday Meal Plan: Week of May 8

 

Smoothie season is upon us and even though the weather is not quite as warm as I’d like, my kids have been loving having a few smoothies. I love them because they are a great way to get in hidden veggies as well. Some spinach here, a carrot there. At least 1 serving of veggies in every cup, and they love drinking them, as do I. Yay for warmer weather.

Breakfast

Strawberry Oatmeal Bars

• Pancakes & Fruit

• Bagels & Fruit

Lunch

• Leftovers, Chicken patties in freezer, PB&J, Smoothies

Dinner

Sunday: We had leftovers from Friday night.

Monday:
• Chicken Tenders, Sweet Potato Fries

Tuesday:
• Baked Tilapia, Couscous, Frozen Veggies

Wednesday:
• Black Bean Quinoa Enchilada Bake

Thursday:
• Leftovers

Friday:
Baked Spaghetti

Saturday:
• Out
